As I have mentioned before, I love me a good brussels sprouts recipe. Cooked the right way, brussels sprouts taste amazing (really). Also, if my husband is any indication on how picky of eaters our future children will be, I feel like I need to stock up on tasty, "not healthy tasting" healthy recipes now. I will need many.
The recipe I'm sharing today is one of those tasty, "not healthy tasting" healthy recipes. The sauteed brussels sprouts coupled with ground turkey and sausage make for a very fulfilling dinner. They also make good leftovers for lunch for the rest of the week if you are me :)
1 hot pork sausage link, casings removed and crumbled
3/4 lb lean ground turkey
4 tsp olive oil
4 cloves garlic, sliced
10 oz. brussels sprouts (after leaves and stems removed)
1 small onion, diced
1 (28 oz. can) crushed tomatoes
1 bay leaf
1 package whole wheat penne pasta
crushed red pepper
salt and pepper
Slice the brussels sprouts.
Cook turkey and sausage over skillet over medium-high heat. Set aside.
In the same skillet, heat 2 tsp of the oil over medium heat. Add the garlic, and then after about a minute add shredded brussels sprouts. Cook for 4-5 minutes. Set aside.
Again in the same skillet, add the remaining 2 tsp. of oil over medium high heat, then add the onions. Cook for about 8-10 minutes. Add the crushed tomatoes, sausage, turkey, bay leaf, crushed red pepper (to taste), and salt and pepper. Reduce heat to low, cover, and let simmer for about 30-40 minutes.
During your downtime, maybe catch a movie on E!. They have been playing some good ones lately (loving Sleepless in Seattle).
While the sauce is simmering, cook the pasta according to the package directions. Once the pasta and the sauce is done, toss together.
